Ingredients

  1. 4   Potatoes (medium size)
  2. 2   Cups wheat flour
  3. 1   Onion finely chopped
  4. 1   tbsp grated ginger
  5. 1   tbsp red chili powder
  6. 1/2 tbsp amchur powder
  7. Chopped coriander leaves
  8. Vegetable oil

Steps of preparation

  1. Boil potatoes and mash them.
  2. In a pan heat 2tbsp oil.  Add chopped onion to it and fry them for 2 minutes.
  3. Add grated ginger and and fry it for another 2 minutes.
  4. Add red chili powder and then add mashed potato.
  5. Now add amchur powder and salt to it and mix them properly.
  6. Add chopped coriander leaves and mix. Keep this stuffing aside and let it cool down.
  7. In another bowl  take wheat flour. Add salt and 2 tbsp oil to it. Knead into soft dough. Leave it for 20-30 minutes to make it softer.
  8. Divide the dough and stuffing equally into small balls.
  9. Roll a ball into small puri. Put the stuffing over it. Close it from all side by your hands.
  10. Again roll it out into paratha. Heat a tawa and cook parathas by pouring some ghee or butter on each side of paratha.
  11. Serve hot with raitha or chutney.

Tips-  Mash potatoes when it is hot to avoid getting it sticky.
